Raw Summer Treats

I've been craving light sweet summer-inspired treats and have been playing around with combinations...being inspired by Heather Pace's Sweetly Raw site and recipe's. Last night, I was up a little past midnight making my first RAW cake/pie which I have named Mango Apricot Sunny. There were plenty left-overs ~ as I am still overshooting portions ~ and threw together a parfait which turned out just as stunning as the Sunny!
